The Bikini Cocktail
Makes enough for 10 servings
Ingredients for the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
To make the Premix (yields 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (see above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Citrus Syrup: Place the listed items into a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the stove and leave to cool down fully. Decant into an sterilised bottle, close it keeping it chilled, where it will keep for around four weeks.
For the Premix: Pour all the liquids in a sizeable container, leave to sit for an hour, then pass it through , ideally through a fine cloth, making it perfectly clear.
For serving: Measure 85ml of your cocktail base into a mixing glass packed with ice, and agitate carefully for about 60 seconds until cold. Filter to a chilled martini glass or a similar vessel, decorate with the cranberries and complete it using a brief mist of mandarin oil above the glass.
